Pear Lemon Mint Smoothie

Serves 2 to 4

lovely in any season; perfect in summer. Choose your pears carefully so they’re not too young or too ripe. This is already low in calories, but to make it even healthier you can substitute honey for the simple syrup. Be sure to drink your smoothie as soon as you make it—otherwise, it changes color from a beautiful light green to an icky gray-brown.

2 ripe Anjou pears

½ cup packed mint leaves

1½ tablespoons Mint Syrup (page 278) or Simple Syrup (page 278)

4 tablespoons fresh lemon juice

2 cups water

2½ cups ice cubes

Peel, core, and coarsely chop the pears. Toss them into a blender with the mint, syrup, lemon juice, water, and ice cubes. Puree until smooth.

I can’t stress this enough, but be sure to drink this immediately before the pear oxidizes—trust me, that’s not pretty.
